Sunday Morning Breakfast for Beautiful Skin.

Every once in a while I like to post one of my favorite recipes that taste good and are good for your skin. With the weekend almost here, it seemed a good time to remember Sunday Morning. Did you have family breakfasts on Sunday Mornings when you were growing up? Maybe you helped your mom make batter or just waited with anticipation as the bacon sizzled. Enjoy that same feeling of togetherness with this skin healthy recipe from Chef De Cuisine, Neal Mendel.

Crepes with Fruit and Berry Puree

Ingredients: (Crepes)

1 large egg plus 1 large yolk

1 1/2 tsp. sugar

1/2 cup flour

3/4 cup milk

2 tbsp. canola oil

Method for Crepes: With an electric mixer at medium speed, beat together egg, yolk, sugar, flour and1/2 cup of  milk until the mixture is well blended. Beat in canola oil and remaining milk to form a smooth batter. Pass the batter through a mesh strainer to remove lumps, if necessary. Refrigerate for at least 30 minutes. NOTE: You can make the batter the night before or make it and freeze it, thawing out to prepare. Heat lightly oiled skillet or crepe pan to medium high. Drop spoonfuls of batter in pan at center and quickly spread the batter from the center in a circular motion using the underside of the spoon. Cook until the bottom side of the crepe is golden brown. Carefully turn to lightly brown on second side. Remove crepe from pan and stack them on a plate. Use wax paper to separate crepes. Fill crepes with peanut butter, fresh berries, or Berry Puree.

Ingredients (Berry Puree)

1/2 cup strawberries

1/2 cup blueberries

1/2 cup blackberries

1 cup orange juice

2 tbsp. lemon juice

1/8 tsp. lemon zest

1/2 cup water

Method for Puree: Put all ingredients into medium sauce pan. Bring to a boil. Remove from heat and transfer one half of the sauce into blender. Work in two batches and be cautious as the sauce will expand from the heat if you try to do it all at once. Hold the cover on the blender with a towel and use pulse to blend. Serve with crepes and ENJOY!
